We use milk produced on-site at the family farm to create high-quality cheeses and more. We offer five hard/aged cheeses: Mercy (creamy cheddar), Grace (aged Gouda), Glory (cream cheese cultured with yogurt), Caerphilly (Welsh cheese), and Amazing Grace (aged over a year, sharp-yet-smooth).
We also have feta, cheese curds in five flavors, yogurt (whole-milk and Greek), gelato, and frozen yogurt.

B’s Cheese, Canajoharie, NY
Featuring the range of delicious cheddars from the Mohawk Valley’s Palatine Cheese, as well as an array of Palatine’s popular spreadable cheeses. Also cheese curds from Stoltzfus Dairy.
We are a fourth-generation dairy farm that produces fresh, homemade, artisan cheese curd from our 70 Holstein/Jersey milking herd (our cows are grass fed and rBST-free; we do NOT use any artificial growth hormones). Our curd flavors include Garlic/Chive, Ay Chihuahua Chipotle, Mustard Dill, Onion Pepper…and others.
We also offer a Swedish Bondost, which is a semi-soft aged farmer’s cheese with fennel flavoring, plus we make a garlic/dill brick cheese. We are also proud of our old-fashioned, hand-pulled mozzarella ball, named “Bolita.” This is a mild cheese that is great for cooking or served with crackers and some pepper jelly!
Bobby McFlee’s Irish Beer Cheese, Herkimer, NY
By popular demand, the star cheese of The Great American Irish Festival returns to the Little Falls Cheese Festival! This special recipe is made from a variety of hard and soft cheeses blended with herbs, spices, and beer (you’ll notice horseradish, garlic, and a little kick of hot pepper). Needs refrigeration and still remains spreadable or dunkable—perfect for crackers, vegetables, and even spread on a burger or sandwich. NEW for 2018: beer cheese balls! and homemade cream cheese with added herbs and flavors.

Fresh from the Catskills! Our family farm is home to 45 Holstein milk cows and 35 head of young stock. The cows are pastured and no rBST is used. We work hard to bring you high quality, wholesome products.
Our Farmstead Gouda is a raw milk Gouda aged at least 60 days. Plain variety in red-waxed wedges and small wheels. Also available: cumin seed, caraway, dill, and aged cider-washed varieties.
The cheesemaker, Patrick, is a French expat from the Poitou region who came to America a couple decades ago. In partnership with neighboring Amish farmers (including working closely with the development of the herd), he produces two Loire-Valley style goat’s milk cheeses.
The flagship St. Johnsville cheese is light ivory in color; its flavors evolve from buttery and mild when young to earthy, goaty, barnyardy, full-bodied-yet-still-creamy after a few weeks of ripening (it was recently praised in the New York Times as “a paragon of subtle elegance”). Mohawk Mist is meltingly tender, milky and buttery, with just a hint of mild goat flavor and a slightly tangy finishing note.
Cooperstown Cheese Company, Cooperstown, NY, crafts a variety of artisanal raw-milk cheeses: America Cheese Society (ACS) award-winning Toma Celena (a nutty and rich Italian table cheese, hinting of toasted grains, apples and caramelized milk), Justine (half sheep’s milk, half cow’s milk), a classic aged English cheddar called Jersey Gold, and another ACS award-winner, Jersey Girl (flavorful, creamy curd cheese).

Farmstead fresh! Named for the creek that runs through our family farm, we offer a unique line of artisanal farmstead sheep’s milk cheeses. All of our products are made from fresh milk every 24-28 hours.
Danascara is a semi-hard cheese made from raw sheep’s milk and aged more than 60 days with a natural rind rubbed with cocoa and olive oil. A mild yet distinctive flavor. Mohawk Maenad is a spreadable cheese made from pasteurized sheep’s milk, similar to a fresh chevre, but even better! Sweet and versatile. We also make a traditional Greek-style feta, in crumbled form, from raw sheep’s milk and aged.
From the daily care of our flock to the meticulous affinage (aging) of the cheese, our passion and commitment is evident in the wholesome cheese delivered from our farm to your table.
Our family has taken the ideal of traditional farmstead cheese and elevated it. By using raw milk exclusively from our own dairy farm we are able to maintain control—literally from pasture to plate. The “terroir” of Wyoming County has led us to focus solely on two French alpine style cheeses.
Our Underpass cheese won a Gold Medal at the 2017 NYS Fair! It is a Raclette-style cheese; Raclette has a smooth and creamy texture which develops a sharper bite as it ages. It melts beautifully and this is what it is best known for.
Silver Lake cheese is a Gruyere-style cheese (part of the “Swiss family”). Silver Lake is aged longer than our Underpass cheese, which gives this hard cheese pronounced nutty and earthy tones. This cheese goes great on everything—think macaroni and cheese, fondue, and cheese plates!
Handmade, small-batch, all-natural aged artisanal vinegars. Made with Upstate New York apples, infused with locally grown berries and herbs as well as raw unfiltered honey. Wonderful for culinary purposes and many health benefits as well.

We began as a small apiary producing honey. As home brewers and a former brewery employee, our interest in mead blossomed. Today our meadery is licensed as a NYS Farm Winery and uses local honey and sources fruit and other ingredients from local producers. We take pride in our connection to our local farming community!

Compared to ice cream, less air is churned into gelato, producing a creamier and denser consistency. Gelato is also a softer and more delicate product, partly because it is served at a relatively warmer temperature. These qualities allow your taste buds to experience flavors more intensely. They also account for why nutty and naturally rich ingredients often make the most exciting gelato flavors. Classifying ourselves as a “forest farm,” we concentrate on small and niche market production. Our primary offerings are with Certified Naturally Grown (CNG) forest-grown mushroom products with an emphasis on Shiitakes. We also offer grow-your-own mushroom logs.
We also have a three-acre open field that we devote to high-quality fruit, medicinal herbs, and produce that we feel cannot be achieved by farming on large acreage. As a result of this, we’ve expanded our offerings to include natural skin-care products such as calendula-based body creams, lotion bars, soaps, and lip balms.

Our cheese recipes have origins in the highly productive river valleys, plains, and mountain regions of Northern Italy. The Finger lakes Region of New York State has a very similar climate and forages to these regions.
